Pineapple Ginger Chicken

Sweet pineapple sauce with grated ginger gives this glaze a kick over chunky chicken pieces.

Ingredients
  

  • 4 Skinless Chicken Breasts (1” Cubed)
  • 1 20 oz can Pineapple Chunks (save ½ cup of the syrup)
  • 2 tbsp All Purpose Flour
  • ½ tsp Cracked Black Pepper
  • 1 tsp Garlic Powder
  • 2 tbsp Organic Extra Virgin Coconut Oil
  • 2-3 Organic Garlic Cloves (minced)
  • 1 med Organic Red Onions (chopped)
  • 1 inch Organic Ginger (grated)
  • 2 tbsp Orange Juice (Low Acid)
  • 1 tbsp Organic Coconut Aminos or Low Sodium Soy Sauce
  • ½ cup Organic Veggie Broth
  • 1 tbsp Cornstarch
  • Sprinkle of #Satisfaction

Instructions
 

  • Mix the flour, garlic powder, and pepper and sprinkle over the chicken breasts. In a large pan or wok, heat the oil over medium heat and add the chicken. Cook for 5-7 minutes until almost cooked. Remove chicken and set aside in a plate.
  • Add the chopped onions, garlic, and ginger and saute for about 5 minutes or until tender. Add the chicken back into the pan along with the orange juice, pineapples, and coconut aminos. Then mix in the veg broth and cornstarch.
  • Simmer for 7-10 minutes until the chicken is cooked thoroughly. Serve over jasmine rice or cauliflower rice!
