Boil spaghetti according to the package instructions. Drain spaghetti saving 1 cup of the pasta water.
In a large frying pan add oil in medium heat. Add garlic and onions and saute til tender and fragrant. Add your favorite veggies, tomato, cumin, onion and garlic powder and black pepper. Saute for about 5 mins.
Toss in the spaghetti into the pan lowering the heat low to medium. If its dry, add pasta water 1Tbsp at a time. You may also want to add more seasonings to taste.
Transfer to a plate and sprinkle shredded cheese to garnish.
