Healthy Pineapple Jalapeno Chicken

Ingredients
  

  • 5 Chicken Breasts (cut in 1” cubes)
  • 1 8 oz can Pineapple Tidbits (with 100% juice)
  • ¼ up Pickled Jalapenos
  • cup Organic Coconut Aminos
  • 1-2 tbsp Organic Maple Syrup
  • 2 cloves organic Garlic (minced)
  • ¼ cup Red Onions
  • 1 tsp Corn Starch
  • Red Pepper Flakes
  • Coconut Oil Spray

Instructions
 

  • Preheat oven to 400 degrees. Place the diced chickens in a baking dish and bake for 30 minutes.
  • In a saucepan, saute the garlic, onions and jalapenos until tender over medium heat. Add pineapples and its juices along with the maple syrup. Mix the corn starch in to thicken for about 5-7 minutes.
  • Pour the pineapple glaze over the baked chicken and mix evenly coating all the chicken. Bake for another 10-12 minutes.
  • Serve over rice or cauliflower rice.
