Preheat oven to 400 degrees. Place the diced chickens in a baking dish and bake for 30 minutes.
In a saucepan, saute the garlic, onions and jalapenos until tender over medium heat. Add pineapples and its juices along with the maple syrup. Mix the corn starch in to thicken for about 5-7 minutes.
Pour the pineapple glaze over the baked chicken and mix evenly coating all the chicken. Bake for another 10-12 minutes.
Serve over rice or cauliflower rice.
