Are you craving something sweet with a bit of zing to your chicky boobies? This tropical chicky will lure some lusciousness to your dinner plans. Don’t worry if you can’t handle the heat. This won’t get you hot and bothered. The pineapple juice and the little tidbits will take over.

Healthy Pineapple Jalapeno Chicken
Ingredients
- 5 Chicken Breasts (cut in 1” cubes)
- 1 8 oz can Pineapple Tidbits (with 100% juice)
- ¼ up Pickled Jalapenos
- ⅓ cup Organic Coconut Aminos
- 1-2 tbsp Organic Maple Syrup
- 2 cloves organic Garlic (minced)
- ¼ cup Red Onions
- 1 tsp Corn Starch
- Red Pepper Flakes
- Coconut Oil Spray
Instructions
- Preheat oven to 400 degrees. Place the diced chickens in a baking dish and bake for 30 minutes.
- In a saucepan, saute the garlic, onions and jalapenos until tender over medium heat. Add pineapples and its juices along with the maple syrup. Mix the corn starch in to thicken for about 5-7 minutes.
- Pour the pineapple glaze over the baked chicken and mix evenly coating all the chicken. Bake for another 10-12 minutes.
- Serve over rice or cauliflower rice.
