When it comes to finding a healthy and satisfying snack, look no further than baked eggplant chips. Made from fresh Italian eggplant and seasoned with coconut oil, cayenne pepper, and garlic powder, these chips are a tasty and nutritious alternative to traditional potato chips.

Ingredients
  

  • 1 Italian Eggplant
  • 2 tbsp melted Extra Virgin Coconut Oil
  • 1 tsp Cayenne Pepper
  • 1 tsp Garlic Powder

Instructions
 

  • Preheat oven to 400 degrees. Cut the eggplant into thin slices, about ¼ inch thick
  • In a small bowl, mix together the melted coconut oil, cayenne pepper, and garlic powder. Brush the eggplant slices with the spice mixture, making sure they are well coated.
  • Arrange the slices in a single layer on a baking sheet lined with parchment paper.
  • Bake for 15-20 minutes, or until the chips are crispy and golden brown.
  • Then D-E-V-O-U-R ! I used Jalapeno Ketchup as my dipping sauce

Notes

Add salt and pepper for added flavor
