Baked Eggplant Chips
Healthy substitute for chips made out of eggplants
Ingredients
- 1 Eggplant - I used Italian Eggplant
- 2 tbsp melted Extra Virgin Coconut Oil
- Dash of Cayenne Pepper
- Dash of Garlic Powder
Instructions
- Preheat oven to 400 degrees. Slice the eggplant about 1/2 inches. Use a mandoline slicer. Place them on a baking sheet.
- Mix your ingredients in a small bowl and brush the mixture very thinly (veeerrrry thin) on each piece. If it is soaked too much, they will not be crispy!
- Bake them for 10-12 minutes on one side, then another 10 minutes again once you flipped them over.
- Then D-E-V-O-U-R !
