Heat and oil in a fry pan. Cut open the soyrizo and remove from the casing. Add to the pan and fry until browned.
While frying the soyrizo, microwave the potato for 2-3 mins. Let it cool. Remove skin and chop into cubes. Set aside
Add the mushrooms and potatoes to the pan. Add garlic powder, cayenne powder, and/or salt to taste. Saute for for 2 minutes.
In a small bowl, add the cooked rice. Add the soyrizo mixture on the side and top off with a fried egg. Serve and enjoy!
