Ingredients
  

  • 1/2 Soyrizo or Chorizo
  • 2 Fried Eggs
  • 1 minced Garlic Clove
  • 1/4 small Onion (chopped)
  • 1 Russet Potato (cubed)
  • 1/4 Cup Crimini Mushrooms
  • Garlic Powder to taste
  • Cayenne Pepper to taste
  • Dried Chives - Optional
  • 1 Tbs oil
  • 1 Cup of Cooked White Rice
  • Pinch of #Healing

Instructions
 

  • Heat and oil in a fry pan. Cut open the soyrizo and remove from the casing. Add to the pan and fry until browned.
  • While frying the soyrizo, microwave the potato for 2-3 mins. Let it cool. Remove skin and chop into cubes. Set aside
  • Add the mushrooms and potatoes to the pan. Add garlic powder, cayenne powder, and/or salt to taste. Saute for for 2 minutes.
  • In a small bowl, add the cooked rice. Add the soyrizo mixture on the side and top off with a fried egg. Serve and enjoy!
