Behind this Drunken Chicken Bowl

This drunken LA-CHICKa fell into a pool of Michelada and Lemon Iced Tea! Have you ever had a Drunken Chicken Bowl in front of you?

Honestly, this isn’t part of my healthy recipes collection but a few of my Instagram followers saw this on my instastory and messaged me wanting the recipe.

I have seen a few of the car show guys buying this drink and I was curious and decided to buy one myself.  Well, it had the beer and tomato flavor but tasted fake.  I have tasted a freshly made kind that my bestie had made for me when I was at her pool party at her house and I loved the flavor.  I do think that a freshly made concoction was better than a canned one.

The next day, I stopped by a gas station and I saw a Michelada Bud Light can and bought one. 

We had chicken thighs defrosting in the fridge.   What better way to use left over beer than to pour and drown them chicks, right?  Had to keep it Mexican and added Tajin with Lime seasoning (Thanks to my Momsy!) to bring out the citrus flavor.

Then, I figured add some sweetness to it with Lemon Iced Tea instead of using the last of my organic maple syrup.  We wanted to barbeque this Drunken Chicken Bowl the next day after the 24 hour marination but never did.  I just put them in the sauna (the oven). 

I decided that this Drunken Chicken Bowl needed some jazzy rice and sauteed veggies to balance the flavor.

Michelada Beer Chicken Bowl

Ingredients
  

  • 3 Boneless Chicken Thighs
  • 1 cup Bud Light Michelada
  • ½ cup Lipton Lemon Ice Tea
  • 2 tsp Tajin Lime Powder
  • 1 tbsp Garlic Powder
  • 1 tbsp Adobo Powder
  • 1 cup Jasmine Rice per bowl (cooked)
  • 1 cup Mixed Veggies per bowl (of your choice)
  • 1 Cup of #Sarcasm

Instructions
 

  • In a mixing bowl, mix all ingredients except rice and veggies. Marinate for atleast 2 hours but preferably overnight.;
  • Preheat oven at 400 degrees.
  • In a shallow baking dish or baking pan, place the marinated chickens and bake for 40 mins. After 20 mins flip to the other side. Halfway through, coat the thighs with its juices.
  • Serve in a bowl with rice and a side of your favorite veggies
