BEHIND THIS  NOURISH BOWL

So you liked my Instagram post about my Naughty Nourish Bowl and you’re here cause you want the recipe, huh? Here it is Tootz.

As promised (and a little late on this post), this nourishing bowl is my go-to when I’m not cooking a meaty meal.  You have probably noticed that I have been including Chicken and some sort of other protein into my diet atleast twice a week.  I only eat them to a minimum cause my stomach can’t handle the digestion.  Yup! I hate the constipation part!

MY EYE SIGHT

Anyway, I’ve been trying to test out nourishing foods to help with my eye sight.  Since the State of New Mexico has been taking very long to let me know if I’m approved for Medicaid or not, I figured I might as well do my own research.  I was taking an expensive supplement but changed it to the main ingredient source of what helps with eye health – Lutein.  For now, I’m taking one 20mg a day.  I am not sure how much I need but if you know anything, preach the knowledge on to me!

THE NOURISH BOWL BREAKDOWN

  • Organic Extra Firm Tofu
  • Turmeric, Garam Masala, Cumin, Curry, Garlic, Onion Powders
  • Organic Extra Virgin Coconut Oil 
  • Cage Free Brown Egg
  • Cilantro
  • Long Grain Rice or Jasmine Rice

HOW TO MAKE THIS NOURISH BOWL

Obviously, this bowl was made for one.  You’ll need to double the ingredients if you want to make a bowl for your Tootz.

 

For Indian Spiced Tofu

I used extra firm organic tofu.  It’s the only Tofu that my favorite local grocery store carries – SMH! It’s really not my favorite grocery store. You need to drain your tofu with a tofu press.  I heard this tofu press works better but I’m a low budget kind of gal and I use this tofu press. Using the press makes it more crispier tofu has been drained.  Well that’s just my experience.  Cut your tofu into 1″ cubes.  I added my spices that I had: Turmeric, Garam Masala, Cumin, Curry Powder, and The OGs (Onion and Garlic Powders) and shook it inside a container to evenly disperse.  You can use your favorite seasonings.

Golden Turmeric Cilantro Fried Rice

When making this, I used a day old rice that was boiled in veggie broth.  Boiling the rice with veggie broth gives it more flavor the next day.  I prefer using jasmine rice but I found a good deal on long grain rice.  Grab a cup of your day old rice and fry it with extra virgin coconut oil.  Throw in a handful of cilantro, chopped garlic and onions.  Now add a dash of turmeric.  Turmeric will bring out that golden color! If you’re a diet trend setter like Keto or whatever Food Gang you’re claiming, replace the rice with cauliflower rice, spiralized veggies, or a low-carb veggie.

Coconutty Fried Egg

You gotta love a fried egg on top of any rice bowl! Drop a tablespoon of extra virgin coconut oil on the heated pan. Crack your cage free brown egg.  Generously, dust it with red pepper flakes and dried parsley.  If you want your eggy like the sunshine – cover your pan with a lid.  If you want it over easy, flip your eggy and wait 2-3 minutes.  I think yall know how to fry an egg by now? OR just Google it!  Common sense – right Tootz?  Now, if you have a coconut allergy, use extra virgin olive oil, grapeseed oil, peanut oil, vegetable oil, like any oil!

Ingredients
  

Baked Indian Spiced Tofu

  • 1 cup drained Organic Extra Firm Tofu (cubed)
  • 1/4 tsp Yellow Curry Powder
  • 1/4 tsp Garam Masala
  • 1/4 tsp Turmeric
  • 1/4 tsp Cumin powder
  • 1/4 tsp Onion powder
  • 1/4 tsp Garlic powder

Golden Turmeric Cilantro Fried Rice

  • 1 Cup Cooked Rice in Veggie Broth (a day old)
  • Handful of roughly chopped Cilantro
  • 1 tsp minced Garlic
  • 1 tsp minced Sweet Yellow Onions
  • 1/4 tsp Turmeric (for color)
  • 1 Tbsp Organic Extra Virgin Coconut oil

Coconutty Fried Egg

  • 1 large Cage Free Egg
  • 1 Tbsp Coconut Oil Red pepper flakes (optional)
  • Parsley (optional)
  • Pinch of #Hugs

Instructions
 

Indian Spiced Tofu

  • You need to drain your tofu with a tofu press. I heard this tofu press works better. Using the press makes it more crispier when tofu has been drained.  Well that's just my experience.  Cut your tofu into 1" cubes. AddTurmeric, Garam Masala, Cumin, Curry Powder, Onion and Garlic Powders and shake it inside a container to evenly disperse.
  • Bake for 20 minutes, flipping halfway through. Let cool and set aside.

Golden Turmeric Cilantro Fried Rice

  • Grab a cup of your day old rice and fry it with extra virgin coconut oil over medium heat.  Throw in a handful of cilantro, chopped garlic and onions. Now add a dash of turmeric. Turmeric will bring out that golden color! Set aside in a bowl.

Coconutty Fried Egg

  • Drop a tablespoon of extra virgin coconut oil on the heated pan. Crack your cage free brown egg.  Generously, dust it with red pepper flakes and dried parsley.

Notes

  • If you want your egg like the sunshine - cover your pan with a lid. 
  • If you want your egg over easy, flip your egg and wait 2-3 minutes.
  • If you have a coconut allergy, use extra virgin olive oil, grapeseed oil, peanut oil, vegetable oil, like any oil!
