Behind the Sour Cream and Chives Smashed Tater Tots…

Back again from a mini 4 day staycation to bring you another leftovers idea for your mashed potatoes.  I know there are others that have posted one.  Here is my contribution to the food blogger world for my Sour Cream and Chives Smashed Tater Tots.

For our Thanksgiving Feast, I made my delicious Easy Teriyaki Green Beans mixed in with the Sweet Ground Chicken.  The two combined together tasted so good that it was a hit with the Mouth Bombers.   My second side dish that I brought was a creamy Sour Cream and Chives Mashed Potatoes. 

Naught-E bought a 5 pound bag of red potatoes with dairy products that consisted of a 2 pound bag of shredded cheeses, a container of cream cheese, and sour cream.  Unfortunately, due to time restraints I was unable to take pictures of the delicious side dish of mashed potatoes except for these:

Other Red Potato Recipes: Easy Oven Roasted Red Potato Wedges

  I boiled the red potatoes in a pot full of water and added a cube of vegetarian stock.  I reserved a cup of the vegetable stock and drained the rest as the milk replacement.  This process brings more of the salty flavor rather than the creaminess from the milk. Besides, you’ll be getting the creaminess off of the cream cheese, sour cream, and shredded cheeses. Naught-E helped mashed the taters. I recommend mashing the potatoes into chunks instead of mashing all the way. It tends to be watery and you’ll end up with a liquified mashed potato puree.  

Smashed Tater Tots Overview:

When you have your chilled mashed potatoes, grab another mixing bowl. We will begin the sour cream and chives smashed tater tots process.  You’ll want to mix your mashed potatoes with an egg, flour, and the bread crumbs.  Then add your special seasonings if you want more flavor.  If you know me, I always use Garlic Powder.

At this point, you can premake and mold your tater tots or until you’re about to fry them.  I usually mold the Sour Cream and Chives Smashed tater tots when close to the time of frying then smashed them when I flip the tots over.

Grab your ghetto frying pan like mine or your fancy one and add oil over medium heat.  Drop a dollop of the mashed potato mixture about the size of a half dollar coin.  Fry both sides each for about two minutes; then flip them over and smash them and flatten them balls! Sour Cream and Chives Smashed Tater Tots Appetizers Naughty-Kitchen.com Drain with a paper towel.  Then sprinkle with dried parsley or chopped chives.  You can add salt if you want the added sodium intake. (Add at your own risk!)

Sour Cream and Chives Smashed Tater Tots

Ingredients
  

  • 2 cups Sour Cream Mashed Potatoes Leftovers (refrigerated);
  • 1 cup All Purpose Flour
  • ½ cup Panko Bread Crumbs
  • 1 Whole Egg
  • 2 tbsp Oil for frying
  • Sour Cream & Fresh Chives
  • 1 tsp of #Flirtation

Instructions
 

  • In a frying pan,heat oil over medium heat. Drop a half dollar amount into the frying pan. Spread evenly about 5-6 pieces. Fry for about 2 mins then flip the tot over. This is when you flatten and mold into a circle or whatever design you want.
  • Drain the tots on a plate with paper towels when they are golden
  • Serve with more sour cream and chives on top!

    I thought this was going to be a quick recipe using store bought tater tots which I was looking forward to since I enjoy all the ingredients. It never occurred to me that you could make tater tots from scratch without flaked or grated potatoes. So interesting.

    Yum!! These sound so goo and the best of both worlds mashed potatoes and the crispy texture of taster tots. Will have to try them next time we have leftover mashed potatoes.
